Vegan Kimchi Pancakes with dipping sauce

Yield:  4-5 large pancakes

Taste: Savoury

Suggested way to serve: Large Pancake cut into triangles around a bowl of dipping sauce

Ingredients:

  • For pancakes
    • Nature Nudge Vegan Krunchy Kimchi- Chopped fine
    • 2 cups plain flour or 1 cup Plain flour+1 cup Whole Wheat Flour
    • Salt to taste
    • Roasted white sesame seeds
    • Vegetable oil for cooking
  • For Dipping sauce
    • Soy sauce -1/2 cup
    • Sugar-1 tsp
    • Roasted and pounded sesame seeds- 1 heaped tbsp
    • Fine chopped onion-1/2 small
    • Fine Chopped red or green Chilli- ½

Method

  • Mix flours, sesame seeds, Chopped Kimchi and all the liquid in the kimchi
  • Mix into a thick batter. Thickness should be such that a dollop put on a pan needs to be spread and will not flow around on its own.
  • Add salt to taste if needed
  • If needed and the batter looks too thick, add 1-2 tbsp water as needed
  • Heat non stick pan and pour 1-1.5 tbsp oil
  • Put 1-1.5 scoops of the batter on the pan and spread to achieve a thick pancake
  • Reduce flame as the pancake takes time to cook
  • Cover pan and let the first side cook through till crisp.
  • Flip over. Add few more drops of oil to the pancake sides. Let second side cook till you see spots and crispness
  • Take out to pan and serve immediately
  • Anticipate each pancake needing up to 5 min to cook
  • If preparing for a family, can cook all pancakes and freshen on pan just before serving.
  • For dipping sauce- mix all ingredients together till sugar is dissolved
  • Serve and make sure you join the table fast because these pancakes disappear so fast!
